Rice and Beans Salad

This is a fresh and nutritious salad, easy to make and perfect for the kids’ lunch box! It’s a great way to introduce salads to your children, and the apple makes it lovely and sweet. Experiment with different combinations of vegetables and beans. Serves 3-4

Ingredients

  • 1 cup Cooked rice (cooled in fridge overnight)
  • 1 can 4 Beans mix
  • 1/3 cup Tomato, diced
  • 1/3 cup Cucumber, diced
  • 1/3 cup Apple, diced
  • 1/3 cup Red capsicum, diced
  • 1/3 cup Carrot, diced
  • 1/3 cup Baby spinach or mixed lettuce, chopped
  • 1/2 tsp Bush or Moroccan spice mix (optional)

For the vinaigrette

  • 1 tbs Olive oil
  • 1 tbs Fresh lemon juice
  • 1 tsp Honey or 100% real maple syrup
